The colour of the coffee fruit indicates its maturity. Thus, green coffee beans are still young. With time, the cherry-sized fruit of the coffee tree (Rubiaceae) changes through yellow to deep red in colour as it ripens. Roasting the ripe coffee bean causes it to acquire its characteristic dark brown to black colour and its typical aroma.
The effectiveness of green coffee lies in its ingredients, such as caffeine, which stimulate the metabolism and can, thus, support weight reduction. In addition, the chlorogenic acids in coffee have an anti-oxidative effect and protect the body against oxidative stress.
The most important constituents of coffee are up to 80 different acids.
The chlorogenic acid is present as a secondary plant compound found in many plants, but the highest concentration is present in green coffee. Caffeic acid and chlorogenic acid are basically polyphenols – a group of substances with antioxidant properties. They protect the DNA and the body from harmful free radicals of oxygen. The composition of the chlorogenic acids is different in green and roasted coffee. With roasting, the coffee loses about 70 % of the chlorogenic acid.
Green coffee contains about 18 amino acids. Roasting tends to increase the strength of glutamic acid and leucine progressively, while decreasing the percentage of arginine, cystine, histidine, lysine, serine, and threonine.
Green coffee extract also contains numerous valuable enzymes and polysaccharides.
The alkaloid caffeine is present as a natural substance (0.8 to 2.5 %) in coffee, in addition to small amounts of nicotinic acid, trigonelline, and theobromine. The green coffee extract contains less caffeine than the roasted coffee.
Furthermore, the coffee has approximately 4 % of mineral substances such as potassium, calcium, magnesium and phosphorus, and many trace elements.

The news quickly got around in England and France, where ship-loads of coffee started to arrive in bags, giving birth to the first coffee houses. The first Café in Vienna opened in 1685. In 1673, Bremen became the first city in Germany with a coffee house. This was followed by the Dutch.
